PASTRY

We are one of very few bakeries in Long Beach and San Pedro that actually make their croissants from start to finish. It is an arduous process from making butter blocks (sheets of butter), making dough, gauging temperatures, and perfecting the rolling out and folding of the two together until the beautiful and intricate layers of croissant dough are formed. Then of course, the cutting (always by hand), shaping, proofing, and baking. All together, its about a week-long process.

In 2018, when Kristin started the company without a bakery and equipment, she made all of these layers the old fashioned way, with a rolling pin. Today we use the aid of a croissant dough sheeter, which helps our skilled laminators roll out the dough with more ease.

We proudly feature the best French butter in our croissants, sourced from Isigny St Mere located in Normandy, France. You may notice a speckle in the interior of our croissants, as we like to sprinkle in whole grain flour from Camas Country for flavor and texture.

PASTRY OFFERINGS

We specialize in and are most loved for our croissant pastries. Kristin was the first baker to bring the infamous kouign amann to Long Beach, after perfecting as Pastry Sous Chef and Pastry Chef at Dominique Crenn’s Petit Crenn in SF. Since our beginnings in 2018, we have developed many other special pastries which we now offer on a daily basis such as scones, cookies, and financiers.
