Bakery Lead $25 hourly
This is a full-time position out of our Long Beach bakery, but will be moving our production to a new facility in Anaheim this May. We are actively looking for folks who interested in working in our new orange county baking space.
Qualifications
• Exceptional organizational and communication skills
• Superior knowledge and experience with European pastry, particularly with laminated doughs
• Superior knowledge and experience monitoring dough and proofing temperatures, lamination
• Must be able to adhere and enforce health and safety regulations
• Minimum 3 years of experience in high volume production baking, at least 6 months in a similar management role
• Ability to understand baker's math and calculate recipe conversions
• Advanced knowledge and technique as related to bread fermentation and laminated pastry with regards to production, handling, shaping, baking
• Maturity and professionalism
• Must be able to lift 50+ lbs and stand for up to 8 hours during a shift

Responsibilities
Inventory control and ordering
Quality Control, training and coaching of bakery team members
Assistance with hiring decisions
Enforcement of production schedule and employee breaks
Proper cleaning and sanitation standards
Weigh and measure ingredients accurately, extensive knowledge of metric system (grams and kilos) and ability to easily scale large batches up and down
Responsible for meeting deadlines, keeping bakers on task and promoting efficiency
Must be able to work well with other bakers and managers. Ability to receive and provide feedback, and self-reflect on work and production methods is a must.
Bakery Production Team Member PT/FT- Starting at $21/hr
This is a part-time or full-time position out of our Long Beach bakery, but will be moving our production to a new facility in Anaheim this May. We are actively looking for folks who interested in working in our new orange county baking space.
-Afternoon shifts (11-7) to start, we plan on implementing a more traditional morning/day schedule when we move to the new facility.
Responsibilities:
Knowledge of and experience dough handling
Experience monitoring dough and proofing temperatures
Inventory control, quality control
Proper cleaning and sanitation standards
Lamination experience preferred for lamination roles
Weigh and measure ingredients accurately, knowledge of metric system (grams and kilos)
Qualifications
Attention to detail in all aspects of baking
Dedicated to working as a team towards one goal
1 + year professional cooking or baking experience or culinary school equivalent
Knowledge of French pastry and bread experience preferred
Must be able to receive regular constructive feedback and adjust to the needs of the bakery and team
Must be able to lift 50+ lbs and stand for up to 8 hours during a shift
